• 1 cup of white wine
  • 1/4 cup Fresh Lemon Juice
  • 2 Tbsp minced Garlic
  • 1/3 cup Olive Oil
  • 1/4 cup Balsamic Vinegar
  • 1 Tbsp dried Oregano
  • 1/2 Tbsp dried Thyme
  • 1 Tbsp dried Basil
  • 1 tsp Sea Salt
  • 1/2 Tbsp Parsley
  • 1/2 tsp Ground Pepper
  • 1 Large Freezer bag or container

Mix all of the ingredients in a large freezer bag bag add the chicken.
Toss chicken and seasonings together and let sit overnight.
Preheat oven to 350 degrees and add chicken and remaining Marinade into a roasting pan.
Baste chicken every 15 minutes until completely cooked. Cooking time varies with size of chicken. It normally takes approximately 2 hours for a whole chicken, about a hour and a half for chicken parts.

Use the chicken stock from the chicken marinade in the pan to make a gravy of your choice. I use 2 tbps of cornstarch whisked with 1⁄4 cup of cold water added to the stock and boil for 5 to 10 minutes.
