- 2 lbs white or red potatoes (cut in quarters)
- ¼ cup fresh lemon juice
- 1 tbsp fresh chopped fresh Oregano
- 3 tbsp fresh chopped parsley
- ¼ cup Olive oil
- Sea Salt, Pepper and Smoked Paprika to taste.
Place the potatoes in a boiling pot and add water and salt. Boil for about 5 to 10 minutes depending on the size of your potato quarters. (potatoes need to be slightly softened)
Drain the water off of the potatoes and transfer them to a large bowl.
Toss with the lemon juice and let stand for 15 minutes.
Preheat your oven to 450 degrees F
Add the Oregano, Parsley, Olive Oil, Salt and Pepper to the potatoes and toss.
Transfer to a shallow baking dish.
Roast for 35 to 40 minutes stirring occasionally.
Sprinkle the potatoes with Paprika and serve hot.
These lemon baked potato wedges go well with grilled chicken, pork, and Lamb chops.
