Ingredients

  • 1/2 cup Olive Oil
  • 1/4 cup Balsamic Vinegar
  • 2 cloves garlic (minced)
  • 1/2 tsp Salt
  • 1 1/2 tbsp Fresh Oregano
  • 1/2 tbsp Fresh Thyme
  • dash of black pepper
  • 1 cup Malbec
  • 1 medium Lemon already juiced (or 1/4 cup lemon juice)
  • 8 to 10 Lamb Chops

Directions
Add all the above Ingredients to a container that has a lid
Add the Lamb chops
Toss and place the sealed container in the fridge for 24 hours.

Pan Searing

Preheat the oven to 350 degrees fahrenheit
Heat your pan up on medium heat setting.
When heated, add 1 tbsp olive oil to the pan.
Add the lamb chops into the pan and sear for 3 to 4 minutes on each side. Being careful not to burn the meat.
After the meat has been seared, place the lamb in the preheated oven. (If you do not have a pan that you can directly place in the oven you will need to transfer the meat to a pan that can be placed in the oven).
Bake for 5 to 15 minutes. For well done you will need to bake for approximately 15 minutes.

I recommend serving these seared lamb chops with lemon baked potatoes and a Greek or garden salad. This dish goes really well with most potato dishes and grilled asparagus.
